Fish Sausage Processing

Fish sausage is a product that is made by adding some meat to the crushed fish or surimi, with starch, plant protein and other auxiliary materials, after chopping, filling and heating.

Process

Select raw materials fish→ chopping → filling and tying → heating → cooling → packaging → finished products

1.Select raw materials

The raw fish is recommended to use tuna, fresh water fish, etc., and other fish can also be used. Proper addition of lean pork, beef or lamb during processing can improve the taste.

2.Chopping

Requirements are the same as frozen surimi, preferably using a vacuum chopping machine. The addition of meat sausage can reduce the amount of air in the surimi. Then add seasoning according to the process formula, which is completed by the high-speed vacuum chopping machine. When finished, store the surimi in the meat trolley cart.

3.Filling & Tying

Press the surimi into the casing with a filling machine. The casing used is natural casing (sheep casing, pig casing) or plastic casing. Artificial casings usually consist of rolls of plastic film mounted on a filling machine, which are infused and tied while surimi is formed. The current market fish sausage is 30g/ piece.

4.Heating

Plastic casings and natural casings are heated in different ways to minimize the rate of intestinal damage.

The sausage after cooling and wrinkling is dried on the surface with cold air, packaged in food bags, labeled, and then boxed for storage or export.
